Meatball Parmesan Sliders Recipe
makes 8 sliders
prep time: 10 minutes
cook time: 40 minutes
total time: 50 minutes

Simple Tomato Sauce

  • 2 tablespoons oil
  • 1 1/2 teaspoons crushed red pepper
  • 1 teaspoon toasted fennel seeds, crushed
  • 1/2 yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, finely shredded
  • 28 ounce can crushed tomatoes
  • 1/2 teaspoon salt

Meatballs

  • 1 lb ground beef
  • 1/3 cup panko or breadcrumbs
  • 1/3 cup finely grated parmesan
  • 1/2 onion, finely diced
  • 4 cloves garlic, minced
  • 1 large egg
  • 1/3 cup milk
  • 1 teaspoon salt
  • 1 teaspoon freshly ground pepper
  • 2 tablespoons freshly finely chopped parsley

Sliders

  • 8 slider buns
  • 8 slices mozzarella cheese or 3/4 cups shredded mozzarella
  • flat leaf parsley, if desired
Make the sauce: heat up the oil in a large skillet over medium heat. Add the crushed red pepper, fennel seeds, onion, garlic and carrot. Cook, stirring, until slightly softened, about 5 minutes. Stir in the crushed tomatoes and salt. Keep on a low simmer while you make your meatballs.
Make the meatballs: gently mix together all of the meatball ingredients together in a bowl. Shape into large meatballs or meatball patties and simmer in the sauce, partially covered, over medium heat, flipping occasionally. Simmer gently until cooked through, about 20-25 minutes.
Make the sliders: preheat the oven to 400°F. Arrange the buns, cut side up, on a lined baking sheet. Top the bottom buns with a bit of sauce, a meatball, and cheese. Bake until cheese is bubbly and melted, about 3 minutes. Sandwich and enjoy hot!

Cabbage Salad

Ingredients
Cabbage - 1/2 small (sliced)
Carrot - 1 (shredded)
Green Bell Pepper (capsicum) - 1/2 (sliced thinly)
Mung Sprouts - 1 cup
Jicama - 1/2 cup (julienned)
Cilantro - 2 tblsp (finely chopped)
Almonds - 10 (chopped)

For Dressing
Orange Juice - 1/2 cup
Ginger juice - 1 tsp
Salt - 1/4 tsp
Sugar/ Honey - 1 tblsp
Black Pepper Powder - 1/8 tsp
Method
1. Mix all the vegetables together. Chop all the vegetables in uniform size.
2. Whisk together all the ingredients for dressing.
3. Mix the dressing with the chopped vegetables. Adjust any seasoning if required.
4. Chill the salad and serve as a healthy meal.

Variations : You can make the salad colourful by adding other vegetables like red cabbage, beetroot, colourful bell peppers, red radish, cauliflower etc. Sometimes I also like to add raisins.

Oats Soup

Oats soup is one of the most easiest way of getting oats into your daily diet. It is simple to make with very few ingredients and can be served as a healthy meal with a slice of bread or as a satisfying appetizer. This soup is suited for people of all ages and for ailing patients.
 
Ingredients
Oats - 1 cup
Onion - 1/2 (finely chopped)
Green Chilly - 1 (finely chopped)
Garlic - 1 clove (minced)
Salt - to taste
Pepper powder - a pinch
Water- 1 cup
Milk - 1 cup
Oil - 2 tsp
Cilantro - for garnish
Method
1. Heat oil in a pan and saute the onions, green chilly and garlic till they begin to sweat. 
2. Now add the oats and fry along with it for 2 minutes.
3. Add salt and water and let it come to a boil. 
4. Now add the milk and pepper powder to it and bring to a boil. 
5. Garnish the rich and creamy oats soup with cilantro or green onions. Serve piping hot with a slice of bread.
 
Variations
    - You can add some finely chopped vegetables to the soup like carrots, green peas, etc.
    - You can also add a pinch of garam masala or cumin powder to make the soup more flavourful.

Tomato, Onion, Avocado Salad

Fresh tomato, red onion, and avocado salad, seasoned Italian style with oregano, fresh parsley, garlic, olive oil, wine vinegar, salt and pepper.
Pro tip: slice the onion first and place in a bowl. Sprinkle with a little water and red wine vinegar. Then prep the other ingredients. Just a few minutes in a little vinegar water will help take the edge off of the onion slices.
  • Prep time: 15 minutes
  • Yield: Serves 6 to 8

INGREDIENTS

  • 1/2 red onion, sliced
  • 3-4 fresh large tomatoes, sliced
  • Kosher salt
  • 2 avocados, peeled and cut into bite-sized chunks
  • 1/4 cup chopped fresh parsley
  • 1 garlic clove, minced
  • 1 teaspoons crumbled dried oregano, or 1 Tbsp chopped fresh oregano
  • Red wine vinegar (a good, strong red wine vinegar)
  • Extra virgin olive oil (the best quality)
  • Freshly ground black pepper

METHOD

Place a layer of sliced tomatoes on a large serving platter. Sprinkle with salt. Arrange the slivers of red onions and the chunks of avocado over the tomatoes.
Sprinkle with parsley, garlic, and oregano.
Drizzle red wine vinegar and olive oil over the platter. Sprinkle with a little more salt and freshly ground black pepper.
Serve immediately or cover with plastic wrap and let sit at room temp for an hour or two before serving. Do not refrigerate.

Greek Lemon Chicken Skewers with Tzatziki Sauce

Grilled chicken breast skewers, marinated in a yogurt lemon marinade, grilled with lemon slices, served with cucumber yogurt tzatziki sauce
  • Prep time: 25 minutes
  • Cook time: 7 minutes
  • Yield: Serves 3 to 4

INGREDIENTS

  • 1 1/4 pound boneless, skinless chicken breasts, trimmed of excess fat
  • 1 teaspoon salt
  • 2 Tbsp plain yogurt
  • 2 cloves garlic, minced (about 2 teaspoons)
  • 1 Tbsp minced fresh oregano (or 1 1/2 teaspoons dried oregano)
  • 1/8 teaspoon freshly ground black pepper
  • 1 teaspoon lemon juice
  • 1 Tbsp olive oil plus more for the grill
  • 2 lemons, thinly sliced
Tzatziki:
  • 1 cup plain yogurt
  • 2 cloves of garlic, minced (about 2 teaspoons)
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1 Tbsp lemon juice
  • 1 cucumber, peeled

METHOD

1 If using bamboo or wooden skewers, place them in water to soak while you prepare the recipe. You'll need either 4 flat skewers or 8 regular round skewers.
2 Cut the chicken breasts into 1 1/2 to 2 inch chunks. Place in a bowl and sprinkle with salt. Add the yogurt, minced garlic, oregano, pepper, lemon juice, and olive oil to the bowl with the chicken, stir to combine. Marinate for 30 minutes to an hour.
3 While the chicken is marinating, make the tzatziki. In a medium bowl stir to combine the yogurt, garlic, salt, pepper, and lemon juice.
Grate the cucumber with the large holes of a box grater. Place in a strainer and press with your hands to squeeze out excess moisture. Add the grated cucumber to the yogurt mixture.
4 Prepare your grill for direct high heat. While the grill is heating, prepare the skewers. Use either flat bamboo or metal skewers or double up regular bamboo skewers so that the chicken is easier to turn on the grill. Thread the chicken pieces onto the skewers with a lemon slice folded over like a taco between each piece of chicken.
5 When the grill is ready brush the grill grates with a little olive oil (use a paper towel folded over several times and dipped in olive oil, hold with tongs). Brush some olive oil over the chicken skewers as well. Place the chicken skewers directly over the hottest part of the grill and cover the grill.
Allow to sear on one side (about 2 to 3 minutes), then turn the chicken skewers over to the other side, cover and cook 2 to 3 minutes more, until the chicken is browned and just cooked through.
Remove from grill and serve immediately with tzatziki sauce.
